Varying sized cuts are available. Our average brisket will be between 5-10 lbs. Feel free to leave us a note of the size you are hoping for and we will get as close to that as possible.
The brisket is a tougher cut than most cuts of beef but is easily counteracted with long slow cooking. The longer and slower a piece of meat is cooked the longer it has to begin to break down into a flavorful, juicy, tender piece of meat.
